Ingredients:

  • 4 medium Yukon gold potatoes ((or 2 large russet potatoes))
  • 1 jalapeno (finely diced)
  • 1/4 onion (finely diced)
  • 2 tomatoes (diced)
  • 2 tbsp olive oil
  • salt ((as desired))
  • 1/4 cup water ((if needed))

Instructions:

  1. Peel the potatoes and dice into small cubes.
  2. Dice the jalapeno, onion, and tomatoes.
  3. Heat the olive oil in a large skillet.
  4. Add the potatoes and cook for 7 minutes, or until golden brown.
  5. Stir occasionally.
  6. Add the onion and jalapeno.
  7. Stir to combine and cook for 1 minute.
  8. Add the tomatoes and salt.
  9. Mix everything together.
  10. Cover and cook for 5 minutes.
  11. Test the potatoes to see if they are done.
  12. If they are not ready, add the water.
  13. Stir and cook for an additional 5 minutes.
  14. Serve as with tortillas as tacos or as a side dish.
  15. Enjoy!
