Ingredients:

  • 2 cups pancake mix (I use a protein-packed pancake mix)
  • 1.5 cups water
  • 1 cup fruit (Fresh/frozen raspberries, blueberries, banana, etc.)
  • 1/2 cup nuts (chopped; if desired)
  • 1.5 cups water
  • 2 cups pancake bites
  • 1/2 cup mini chocolate chips
  • 1.5 cups water
  • 2 cups chocolate pancake mix
  • 1/2 cup mini chocolate chips
  • 1.5 cups water
  • 2 cups pumpkin pancake mix (mix with batter; adjust to taste)
  • 1.5 cups water
  • whipped cream
  • syrup
  • {

Instructions:

  1. Preheat oven to 350 degrees.
  2. Spray muffin tin with cooking spray and set aside.
  3. Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
  4. Chop any filling ingredients.
  5. Mix 3/4 of the filling ingredients nto the batter and stir.
  6. Pour batter evenly across the 12 spaces of the muffin tin.
  7. Sprinkle the remaining 1/4 of the filling ingredients on top of the muffins.
  8. Bake at 350 for about 20 minutes, or until middle is cooked through.
  9. Enjoy with a side of syrup or topped with whipped cream!
