Ingredients:
- 2 cups pancake mix (I use a protein-packed pancake mix)
- 1.5 cups water
- 1 cup fruit (Fresh/frozen raspberries, blueberries, banana, etc.)
- 1/2 cup nuts (chopped; if desired)
- 1.5 cups water
- 2 cups pancake bites
- 1/2 cup mini chocolate chips
- 1.5 cups water
- 2 cups chocolate pancake mix
- 1/2 cup mini chocolate chips
- 1.5 cups water
- 2 cups pumpkin pancake mix (mix with batter; adjust to taste)
- 1.5 cups water
- whipped cream
- syrup
Instructions:
- Preheat oven to 350 degrees.
- Spray muffin tin with cooking spray and set aside.
- Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
- Chop any filling ingredients.
- Mix 3/4 of the filling ingredients nto the batter and stir.
- Pour batter evenly across the 12 spaces of the muffin tin.
- Sprinkle the remaining 1/4 of the filling ingredients on top of the muffins.
- Bake at 350 for about 20 minutes, or until middle is cooked through.
- Enjoy with a side of syrup or topped with whipped cream!
